Sausage Calzones

Sausage Calzones (from Taste of Home Baking book)

  • 1 pkg dry yeast
  • 1/2 c warm water
  • 3/4 c warm milk
  • 2 Tbsp olive oil
  • 1 1/2 tsp salt
  • 1 tsp. sugar
  • 3 - 3 1/4 c flour
  • 1 lb. Italian sausage
  • 1 pkg frozen spinach thawed and squeezed dry (I have also used fresh)
  • 1 carton (15oz) ricotta cheese (i don't like ricotta so i used cottage)
  • 1/2 c Parmesan cheese
  • 1 Tbsp fresh parsley
  • 1/8 tsp pepper

  1. In large bowl, dissolve yeast in warm water. Add milk,oil,salt, sugar and 2 c. flour. Beat until smooth. Add remained flour until soft dough forms. Knead 6-8 minutes until smooth and elastic. place in greased bowl, turning once to oil top. Cover and let rise until doubled (about 1 hr)
  2. Cook sausage in skillet, drain. Stir in spinach, cheeses, parsley and pepper; set aside.
  3. Punch down dough. Turn onto lightly floured surface; divide into 6 pieces. Roll each piece into 8 in. circle. Top each with 2/3 cup filling. Fold dough over and pinch edges to seal. Place calzones on greased pan. Brush tops with olive oil and sprinkle with garlic salt.
