Bran (and alot more!) Muffins

I really like knowing what is in my food.  And, I like feeling good about what I am feeding David and Peter (and soon Jonah!).  I found the recipe for these Bran Muffins on the back of Bob's Red Mill Flaxseed Meal.  Don't be fooled by the boring name...these are loaded with alot more than bran!!!  I made them last night and we had them for breakfast this morning.  YUM!  Besides typing the recipe here to share with you, I will be hand-writing it on a recipe card to keep in my box to make again and again.  I'm sure it will soon be one of those recipe cards that is hard to read because it is wearing some of the ingredients that are written on it:)


Bran (and alot more!) Muffins 
(adapted from Bob's Red Mill Flaxseed Meal)

Chopped walnuts; I used a knife; one of those handy dandy Pampered Chef chopper thingys would have been nice, but I don't have one; oh well, it was good for me to practice my chopping skills as I am slow and my husband would say scary with a knife!

Shredded carrots; I shredded my finely ; it was surprisingly fast & fun! so fun that I shredded carrots the next day for a garden salad and found it was faster than chopping them!
Buttered and ready to devour!

  • 1 1/2 c. flour (I used 1 c. whole wheat and 1/2 c white)
  • 3/4 c flaxseed meal
  • 3/4 c oat bran
  • 1 c brown sugar
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp salt
  • 2 tsp. cinnamon
  • 1 1/2 c. shredded carrots
  • 2 apples, peeled and shredded
  • 1/2 c. raisins (optional; I didn't put these in; raisins in baking things kinda creep me out!)
  • 1 c nuts, chopped
  • 3/4 c milk
  • 2 eggs, beaten
  • 1 tsp. vanilla
Mix together all dry ingredients. Stir in carrots, apples, and nuts.  Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients.  Stir just until moistened.  Fill muffin cups or greased muffins pan 3/4 c full.  Bake at 350° for 15-20 minutes.  Says it yields 15 muffins but I got more like 20.

I love muffins! I definitely don't normally have some of those ingredients on hand, but it would probably be a good idea to get them to try out new recipes :)
