We have been on a mission to eat fresh, homemade healthy goodness around here. I have been a crazy lady in our wonderful tiny little kitchen making homemade everything. Crackers, tortillas, a Father's day cake (that actually wasn't very good at all...can't win 'em all:), granola bars, whole grain anything-you-can-think of... Recently, our once fellow Coloradoan family (no longer fellow because we are now in North Dakota, where it didn't even reach 70 degrees on this first day of summer...CRAZY!) visited and gave me the "Colorado Classique" cookbook. I've been through it cover to cover and about every other page is marked to try. Beside the fact that the front slogan of "a collection of fresh recipes from the Rockies" rings true, my other favorite thing about this cookbook is that it has breakfast COOKIES! Yep, cookies...for breakfast!!! Something I have eaten often for breakfast in my lifetime, except now there is an actual recipe for it...and it is loaded with all kinds of whole grains! It is on my "to try" list...but alas, there is only so much time in a day...
Anyway, here is a recipe from that cookbook we had tonight that was AMAZING! I enjoyed it over lettuce and leftover fish taco meat from last night. Peter enjoyed it as a quesadilla made with homemade whole wheat tortillas.
Confetti black bean salsa (from Colorado Classique cookbook)
- 2 16 oz. cans black beans
- 1 18 oz. pkg. frozen corn, thawed
- 2 large tomatoes, seeded and diced
- 1 red onion, finely diced
- 1 avacado, diced
- 2 fresh jalapenos, seeded and chopped
- 1/2 cup fresh cilantro, chopped (don't skimp on the fresh cilantro...it TOTALLY makes the salsa!!!)
- 1 1/2 Tblsp. 'fancy' vinegar (recipe calls for red wine vinegar...but I just used some vinegar I got as a gift from my good friend over at www.worththetoil.blogspot.com , Hilary:)
- 3 limes, for juicing, or lime juice
- salt and pepper to taste
- Mix all ingredients in large bowl, except lime wedges. Squeeze lime wedges or lime juice over mixture. Let marinate at least 2 hours...the longer the better! Salt and pepper to taste.

Looks delicious! Matt LOVES cilantro SO much and would eat it on something every day if he could :) You need to share more recipes from this cookbook! I'm glad you had fun company from the Colorado family!
Funny, about a month ago I ran into an almost identical salad (minus the avocado and tomato) that a girl made out here and I had to get the recipe. It is awesome! And avocado only seems like a good addition.
