Oatmeal Peanut Butter Chocolate Chip Cookies



Don't you want to eat one?!


About a month ago, I found the recipe for these cookies at www.cookingforseven.com.  I have made this recipe countless times since then and almost always have some in my freezer.  That reminds me, I need to go shopping for non-hydrogenated peanut butter tonight (And, alas, Sam's does not sell it...perhaps I'll check some online stores)!!  Many batches have been given away and I have also experimented with putting 1/4 cup or so of flaxseed meal in them to give them even more nutrition.  My favorite way to make them is jumbo-sized!  I use a 1/4 cup measure and extra large chocolate chips or chunks.  Also, plain old whole wheat flour works great in these too!  This is a cookie I can feel good about feeding David!!  I know what is in them...whole, nutritious ingredients!

I actually don't hate it when that happens...because then I get to eat it:)  Note: you really should let the cookies cool for at least several minutes before removing them from the cookie sheet!

Thses look amazing. I will have to try them. I noticed the countertop upon which you made thes. Does it bring back memories of your old, old kitchen?

I need to make these too! They look really good, and I have wheat flour to use.
