Farmer's Market Pesto

Beautiful, aromatic basil in my food processor, a kitchen tool I use almost daily!

Don't you want to smear it on a sandwich or pizza crust?
Have you been to your local Farmer's Market?  You should go, you will *love* it!  You'll never know what you might find, but chances are it will be local, yummy or healthy for you:)  I found herbs!  For 5 bucks, I walked away with enough basil to make 2 batches of pesto, and rosemary, to add to bread for my rosemary loving hubby:)  

Pesto
(adapted from Food Network) 
  • 2 cups packed fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup walnuts
  • 2/3 cup extra virgin olive oil
  • Kosher salt and freshly ground black pepper, to taste
  • 1/2 cup freshly grated Parmesan cheese
Pulse first 3 ingredients in food processor until coarse.  Add remaining ingredients and pulse until desired consistency.  Pour in jar and store in refrigerator.  Can be frozen for up to 3 months.
