Bell Pepper Stir Fry



We have oodles and OODLES of peppers in our garden this year!  We're talking like pounds and POUNDS of them!  I came across a stuffed bell pepper recipe last year and while they were really good, they were tedious to make and a pain to cut up for the boys so they could easily eat them.  The recipe also called for a couple of processes foods that I swapped out for fresh ingredients.

This year, I decided to simplify a bit and do this recipe stir-fry version.  SO much easier and WOW was it GOOD!  The best part too is you can decide what you would like to serve it on: mashed potatoes, rice, pasta..whatever you have on hand!

Bell Pepper Stir-Fry


  • 4 large bell peppers, chopped                                           ½ cup shredded cheddar cheese
  • 1 lb. ground beef                                                                 ¼ cup salsa
  • 1 medium onion                                                                  ½ cup sour cream
  • 2 garlic cloves, minced                                                       1 cup diced tomatoes
  • ½-1 tsp. salt                                                                        1 tsp. soy sauce
  • ½ tsp. black pepper                                                           ½ tsp. garlic powder

In large hot skillet, sauté ground beef, onion, and garlic until onions are translucent and beef is no longer pink.  Add remaining ingredients.  Serve over cooked rice, pasta, or mashed potatoes.
